This position controls food and labor cost, handles continuous menu development, and is involved with the growth of the culinary team.
The Dining Room operates 3 high volume meal periods, 7 days a week from April through November.
*This position is seasonal.
* *Responsibilities* * Plans seasonal menus for restaurants and special events with Executive Chef * Schedules and coordinates the workload of kitchen employees, assuring that food preparation is economical and technically correct and within budgeted labor cost goals * Ensures that high standards of sanitation, cleanliness and safety are always maintained throughout all kitchen areas * Establishes controls to minimize food and supply waste and theft * Safeguards all food-preparation employees by implementing training to increase their knowledge about safety, sanitation and accident-prevention principles * Develops standard recipes and techniques for food preparation and presentation that help to assure consistently high quality and to minimize food costs; exercises portion control for all items served and assists in establishing menu selling prices * Attends food and beverage staff and management meetings * Consults appropriate departments about food production aspects of special events being planned * Cooks and directly supervises the cooking of items that require skillful preparation * Evaluates food products to assure that quality standards are consistently attained * Develops policies and procedures for back of house operations * Works with and coordinates all catering / banquet events with the appropriate team members * Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment * Provides training and professional development opportunities for all kitchen staff * Ensures that representatives from the kitchen attend service line-ups and meetings * Motivates and develops staff, including cross-training and promotion of personnel * Establishes buffet presentations * Maintains physical presence during times of high business volume *Physical Requirements & Working Conditions* * Must be able to work days, nights, weekends, and holidays * Must be able to be on feet for long periods of time and handle continuous repetitive motions * Required to climb stairs, balance, stoop, kneel, crouch, bend stretch and twist or reach * Push, pull or lift to 50 pounds * Work in hot, humid and noisy environments *Qualifications/Skills* * Proven experience as a Sous Chef (2 years preferred) * Understanding of various cooking methods, ingredients, equipment and procedures * Experience in breakfast service required * Excellent record of kitchen and staff management * Experience in fine dining a la carte operations and banquet preparation is preferred, but not required * Working knowledge of various computer software programs (MS Office, restaurant management software, POS) Check us out on Facebook or Instagram at *@arcadiabluffs *or visit our website for more company information at *www.
